From Liliana in Seville I learn the Spanish ritual of sobremesa—“over the table”—that leisurely time after lunch when everyone stays put at the table to talk, relax. A way of eating as important as the food, maybe more.

When laughter and conversation negotiate amiably and call it a draw.

The first afternoon, I start to take my leave soon after the last bite of tocino de cielo.

“No, Peterman, stay. You must learn to linger.”

She offers me a cigar and refills my coffee.

In retrospect, I admit her admonition was spot-on. At least I’m a quick study.
